Let's Talk Soy

Q.  Would you give me information on soy? I've been eating soynuts but I'd like to know the breakdown of fat content, etc. What do you think of this product?

A. Soynuts are about 50% fat; however, the other benefits to eating soy products are abundant. For instance, 1/4 cup of soynuts contains 232 mg of calcium! The calcium in soy is readily absorbed by the body. Soy is also a great source of high quality protein. It is the only vegetable source containing all of the essential amino acids which makes it a complete protein. Soy is also a good source for chromium, magnesium, and B vitamins niacin, pyridoxine, and folacin. Soybeans are the only food source with nutritionally significant amounts of one important phytochemical called isoflavones. In various research experiments, isoflavones directly or indirectly have been found to lower cholesterol, inhibit bone resorption, relieve menopause symptoms and possess anticancer activity. Some research shows that just one serving of soyfoods -- one cup of soy milk or 1/2 cup of tofu -- is sufficient to exert clinical effects. These are just a few of the benefits of soy.

Soybean oil itself is a great source for polyunsaturated fats but it is very unstable and other oils could likely be added to it in order to extend the shelf life of a food product.  Read the label to see if there are other sources of oil added to the soynuts.
