Guilt-Free Fettuccine Alfredo
½
lb. fettuccine pasta, dry
1 Tbs. reduced calorie margarine
1 Tbs. skim milk
3 Tbs. low fat vanilla yogurt
1 large raw egg white, beaten
¼ tsp. black pepper
3 Tbs. fresh Parmesan cheese, grated
Instructions:
Cook fettuccine until chewy. Drain. Toss margarine
into fettuccine and toss till margarine is melted
and fettuccine is coated. In a separate bowl,
stir together milk and yogurt and add to fettuccine.
Add egg white, pepper and grated cheese and
toss well. Variation: Add chunks of chicken
for a full meal. Serves
