Cheese

cup elbow macaroni, uncooked
2 eggs, beaten
1 cup skim milk
1 cup low fat cottage cheese
¼ cup low fat cheddar cheese, shredded
¼ cup low fat Swiss cheese, shredded
¼ tsp. salt
¼ tsp. ground pepper
1 Tbs. dry breadcrumbs
Nonfat cooking spray
Instructions:
Preheat
oven to 350 degrees. Cook macaroni according
to package directions with exception of salt
and drain. Combine macaroni and next seven ingredients.
Spray a 1-quart baking dish with nonfat cooking
spray and pour mixture into dish. Sprinkle with
breadcrumbs and bake for 1 hour. Serves
6 at 1/2 cup each.
