Oatmeal Banana Mug

1/2 c. oatmeal (old fashioned or instant oats)
1 cup water
1 small ripe banana (sliced thin or mashed)
1/2 T. clover honey
2 pumps liquid butter spray

Instructions:

Pour oatmeal into boiling water. Add sliced banana. Stir over the stove for 3 - 5 minutes until oatmeal is cooked. Pour into a bowl and top with butter and honey.

Variations:

  • Use nonnutritive sweeteners other than aspartame or Nutri-sweet
  • Use organic yellow or red bananas. They taste like candy.
  • Try 1/2 c fresh fruit, such as blueberries, or chopped pears; cinnamon applesauce or 1 oz dried fruit cherries or dates; instead of bananas.
  • Top with a T of toasted nuts such as walnuts, sunflower seeds or pecans.
  • Serve with 8 oz of low fat milk, or light yogurt.
