Organic Gluten Dairy Free Brownies

The beginning of the holidays, Halloween is almost here. My plan for ``NOT`` binging on sweets is keeping Organic Gluten Free Dairy Free Brownies in my freezer. I usually keep ripe in season fruit around as the first defense but on those cold days, there is nothing like a hot cup of hibiscus berry tea and a hot brownie, Oh yes and they have no gluten, no dairy and are of course ``Organic``. I usually make a double batch you will see in the picture...but the recipe is for a single batch. Use a nine by nine inch baking dish lined with butter and parchment paper. Ingredients

  • 2/3 C Organic Semi Sweet Chocolate Chips or (regular if preferred)
  • 5 T Organic Butter or Coconut Oil
  • 2/3 C Organic Coconut Sugar
  • 2 Eggs
  • 1 t Vanilla Extract
  • 2/3 C Organic Blanched or Fine Almond Flour
  • 2 T Organic Cocoa Powder (look for dark variety)
  • 1/2 tsp Baking Powder
  • 1/4 tsp salt
  • Add in
  • 2/3 C Chocolate Chips
  • 2/3 C Chopped Pecans

Instructions

Preheat oven to 350. Grease a 8 or 9 inch square baking dish with butter and line with parchment paper.

Heat butter and 2/3 C of chocolate chips in a pan until melted and blended.

Mix flour, cocoa, baking powder and salt together.

Whisk together eggs, sugar, and vanilla extract.  Add to the melted butter and chocolate chips until smooth.

Add in the flour mixture and stir the ingredients well. Mix in extra chocolate chips and pecans (if nuts are desired). Pour into your baking pan.

Bake for 13-16 minutes depending on your oven.  To test if it is done, test the middle with a toothpick.  Cool and cut into squares.

If you decide to double this recipe. Only add 3 eggs instead of 4. You can make any variety of this recipe you would like. Sea salt is really tasty as a topping when it is still hot. You can use another variety of organic chocolate bar such as raspberry or sea salt as the second chocolate. If you can find a good tasting white chocolate that would be fabulous as the added chocolate. Freeze the leftovers so you are not tempted to eat the whole thing.
Also find a really tasty organic chocolate chip to use. Some are better than others. Getting the right chocolate chip makes the recipe.
