Summer is a time to relax, slow down and enjoy fabulously hydrating summer fruit.A particular favorite is a watermelon mint slush with blueberries. Some people are unaware of the powerful medicinal value of watermelon. It contains thiamin, riboflavin, niacin, vitamin B-6, folate, pantothenic acid, magnesium, phosphorus, potassium, zinc, copper, manganese, selenium, choline, lycopene and betaine for digestion. According to the National Watermelon Promotion Board, watermelon contains more lycopene than any other fruit or vegetable! Wow. We all are aware of the anticancer properties of blueberries but they also are low in sodium, high in magnesium to lower blood pressure and high in fiber to regulate blood sugar and regularity.Mint aides in digestion and lowers inflammation! So there you have it the perfect summer chillaxing drink!

Ingredients

  • 6 cups Watermelon large chunks cold
  • 3-4 cups Ice Cubes
  • 4 large leaves Fresh Mint Leaves
  • 1 cup Fresh Blueberries
  • 1 tsp Unfiltered Local Honey

Instructions

Pulse blend watermelon, and ice until slushy. Add mint and pulse one time.

Fold in fresh blueberries.

Pour into a chilled tall glass and top with fresh a sprig of mint.
